“Lam” rice (or Bamboo Cooked Rice) is a typical dish of ethnic minorities in mountainous area of Northern Vietnam. Originally, “lam” rice was invented as a kind of food for long journey in the forests. Upon the journey, Vietnamese ethnic people can cook rice in a bamboo pipe instead of a pot. By the time passed, “lam” rice has become popular, and is preferred as impressive blend of rice, stream water and slight scent of bamboo.

“Lam” rice is made from sticky rice which is grown on the hills. Sticky rice is put in a bamboo pipe and added some water. For more delicious taste, ethnic people usually use stream water and add some salt in. The bamboo pipe then will be sealed up by banana leaves and roasted above red coals or hot fire. That process will be done within about 30 minutes.“Lam” rice is served with grilled chicken or grilled Man pork. Some sesame and salt are indispensible while eating this dish. Steamed glutinous rice with seven colors is called “xoi bay mau” in Vietnam; it is a traditional dish in festivals of Nung Din ethnic in Muong Khuong province (Lao Cai). This dish has seven colors such as pink, vermilion, scarlet, bright green, yellow green, banana leaf green and yellow and especially these colors is made from natural tree so you can totally feel secure when eating it.

On the first of July every year, Nung Din people usually hold festival to celebrate a victory. In the festival, steamed glutinous rice with seven colors is always displayed as an indispensable food. As beach vacation destinations go, Vietnam perhaps isn’t the obvious choice. However, the country’s beaches are beautiful enough to rival those of the more famous Thailand resorts, and there are plenty that haven’t yet been spoiled by high-rise resorts and an influx of western travelers. In this guide, we’ve included popular Vietnamese beach resorts alongside less frequently visited beaches that enable you to get away from the tourist traps.

 

1. DANANG

Da Nang may be the third largest city in Vietnam, but that doesn’t mean its beaches are anything to be sniffed at. 5 Tips for Eating Street Food in Vietnam

The street food in Vietnam looked delicious and the ingredients appeared to be fresh, but would my tender Western stomach be able to handle it all? Should I miss out on this vital part of Vietnamese life, or forge ahead and risk earning a first-class ticket on the “Imodium Express?”

I found the perfect answer in the town of Hoi An, the charming old town known as the culinary capital of central Vietnam. I signed up for A Taste of Hoi An, a combination food tasting and walking tour around the town. Run by Aussie Neville Dean, this street food tour takes up to six guests for a stroll through the back streets of Hoi An. A local nutritionist has personally inspected all the stands they visit to make sure they use sanitary cooking practices and fresh ingredients. During the four-hour tour Neville share anecdotes about Vietnamese food and markets.

We stopped at local fresh markets, small “one dish” restaurants, and many of those street stalls that are so intimidating to a newcomer. Among other delights, we slurped the ubiquitous pho, trying to make as much noise as the locals.
Neville taught us a few tips on selecting the best markets and street stalls:

1. Find food-only markets

The best food is found in markets where people come specifically for food. Many towns have markets that carry a little bit of everything, or a lot of t-shirts and other tourist-related trinkets. Locals don’t shop here, any more than you would go to a touristy place in your hometown to buy vegetables.

2. Avoid the flies

Forget the prejudice that Asian open-air markets are steamy, smelly and fully of flies. The truth is most of the small street markets in Vietnam are scrupulously clean, and the food very fresh. Meats are slaughtered, butchered and sold within four hours. Vendors bring only enough food to sell in one day. If there are no flies and no nasty odours, you have found a good market.

3. Go early

The market closes when all the food is gone. If you want to see silvery stacks of freshly caught fish on ice, piles of crisp bean sprouts or cilantro and mounds of fresh rice noodles get there well before noon or you’ll miss the mouth-watering display.

4. Look for the trash

For street stalls, ironically, the key is to find a place with lots of papers around it. The Vietnamese keep their streets clean, sweeping in front of their shops and stalls constantly. Diners drop their order chits on the ground, where the stall owner will sweep them up at the end of a mealtime. A stall with good food is one where there are many chits on the ground - a sign that it is has constant traffic.

5. Find a one-dish spot

Many tiny storefronts (or front porches of homes) serve one dish only. They specialize and use only the freshest ingredients. Treat your dining experience as a moveable feast: a fruit shake here, some pho bo there, then down the street to the tofu custard lady for dessert. You can eat, work off calories and sightsee all during a meal.

By the end of our morning walking tour we had more than 40 (yes 40!) tastes of Hoi An. Everything was well prepared and fresh. Some weren’t to my particular taste, such as the black sesame pudding. But I’d say a hit rate of about 38 out of 40 was pretty good./.

Games People Play in Myanmar

In the States, it’s a common sight to see people playing basketball in their driveways or in neighborhood parks. In Thailand we saw people playing soccer in every available open space. In India the default street game is cricket. During our two weeks in Myanmar we saw the most varied games we have seen in a country thus far. It seems as if everyone, regardless of age or ability has a game of choice.

Our first game sighting was the Burmese national game of Chinlon, invented over 1,500 years ago for Burmese royalty. The game is more of a social dance than a competition. Traditionally, it has six participants who move in a circle, keeping a single rattan ball called a Chinlon in the air by using a combination of knees, feet and heads. It’s similar to playing with a hacky sack, but the repeated sound of the clicking rattan ball adds a musical element to the measured moves of the players.

A Chinlon is also used to play a modified version of volleyball, where the objective is to use only heads and feet to land the Chinlon on the opponent’s side of the net. Skilled players can actually spike with their feet. When we walked through the old Indian quarters of Yangon we saw little kids playing cricket in the streets. Apparently, cricket is only played among the Indian Burmese. I suppose our love for the game is strong no matter where in the world we are.

 

In the alleys of Yangon’s Chinatown we found this group of men playing checkers. The pieces on one side we beer bottle caps facing up. The other side had the bottle caps facing down. The men were liberally consuming beer while playing, which I am sure is part of ensuring that they never run out of game pieces.

We witnessed what may be the most magical setting for a chess match - oversize pieces on a board set along the moat of the royal palace at Mandalay. The players were so fascinated by our fascination of them, they invited us to play.

While in Inle Lake, our boat driver settled into a game of carom while we ate our lunch on the water.

Many children in Myanmar haven’t seen an Apple product, let alone a mechanical toy or even a set of coloring pencils. In the villages we trekked through in Kalaw we say these children happily adapting their own game of marbles using stones.

Apart from the chess pieces, all the material needed for these games were simple. Yet in contrast to some of the highly competitive games we play (Sandeep and I can get very nasty with each other in Scrabble) people engaged in their games were happily interacting with their opponents, keenly aware of the social aspect in task./.
